Tasting Notes
The 2008 Houdini Dry White is pale straw in colour with aromas of subtle stone fruits, such as white peaches, hints of creamy musk and a touch of talc and spice. Soft apricots roll through the palate, with a subtle yeasty cream texture, balanced with subtle acid and minerality and a soft talcy finish.

Vinification & Maturation
The fruit was sourced from vineyards in the northern Adelaide Hills sub region of Gumeracha.
The fruit was hand picked, then cooled for 3 days, prior to being whole bunch pressed, with the free run being settled for 36 hours. This juice was then racked to old French barriques where it was then inoculated with one of two different Rhône yeast isolates. Average fermentation temperature was 15.00C. Post fermentation, the barrels were topped and the wine remained on yeast lees with some stirring until being racked prior to bottling. Some malolactic fermentation was detected during maturation and allowed to proceed, but the extent was assessed as minimal.
